赤紫蘇(アカジソ) red shiso

 朝日を浴びて輝くアカジソの穂です。
 (アカジソでも、未成熟の実を包んでいる萼は、緑色に見えています、葉には光が当たっていないので、ほとんど黒色です。)
 アカジソの葉は、アントシアニン色素を豊富に含むので、赤紫色をしています。色違いで、緑色のアオジソもあります。
 アカジソは苦味があるため、生で食べることはまずありません。その代わり、主に鮮やかな色素として用いられ、伝統的な日本の梅干しを、赤紫色に染める役割をします。
  一方、アオジソは、アクやクセが少なく、さわやかな香りがあるので、生のまま食べます、例えば刺身のつまなどとして。

 A Red Shiso (leaves) has a reddish-purple hue results from its high content of anthocyanin pigments. There is also a variety called Green Shiso, which has a green color. 
 A Red Shiso is seldom eaten raw due to its bitterness. Instead, it is chiefly utilized as a vibrant pigment to transform traditional Japanese fermented plums (Umeboshi in Japanese) into a reddish-purple hue. 
 On the other hand, Green Shiso has little astringency or strong flavor and has a refreshing aroma, so it is eaten raw, such as as a garnish for sashimi.
